Healthy Banana Chocolate Banana Muffins

Fall = Muffin at the Klein Residents!!! 

These are absolutely my vice. So If I'm going to eat something often... it means finding a healthy version!  
🍌1 1/2 cups whole wheat pastry flour or gluten free flour . ( many healthy alternatives)
🍌1 teaspoon baking soda
🍌1/4 teaspoon salt
🍌3 bananas
🍌1/4 cup honey
🍌1 tablespoon vanilla
🍌1 tablespoon olive or coconut oil
🍌1 egg
🍌1/2 cup nonfat plain greek yogurt
🍌1 tablespoon unsweetened almond milk
🍌1/2 cup chocolate chips
Preheat oven to 350 degrees F. Spray 12 cup muffin tin with nonstick cooking spray. In a medium bowl, whisk together flour, baking soda and salt.Add bananas, honey, vanilla, oil, egg, milk and yogurt to a blender. Blend on high for 1 minute or until well combined, smooth and creamy. Add wet ingredients to dry ingredients and mix until just combined. Gently fold in chocolate chips.Divide batter evenly into muffin tin and bake for 20-25 minutes or until tooth pick comes out clean or with just a few crumbs attached. Cool muffins for 5 minutes then remove and transfer to a wire rack to finish cooling. Muffins are best served warm and even better the next day.

Healthy yet DELICIOUS Breakfast Recipes

Chunky Monkey Chocolate Banana Parfait 

Ingredients:
1 scoop Shakeology   ( Of course you can use any protein powder.. but i ABSOLUTELY would suggest Shakeology  .. it is delicious and incredible for you! )
1 cup 0% fat greek yogurt
Cinnamon Egg White Oats ( see recipe below )
Sliced banana
Walnuts 
1 delicious piece of dark chocolate
Directions:
Mix 1 scoop Shakeology  with greek yogurt. Layer Yogurt mixture with Cinnamon Egg White Oats and banana slices! Top with walnuts more banana and a piece of dark chocolate !
Tip : Sprinkles stick better with honey than peanut butter

Enjoy !!

Cinnamon Egg White Oats
Serves: One
Ingredients
1/3 cup Oats
3/4 cup Liquid Egg Whites (about 4 egg whites)
1 tsp Vanilla Extract
Cinnamon
Directions
Combine ingredients in a bowl. Microwave for 1 minute and stir everything well. Microwave for an additional 30 seconds and stir everything again. Add any toppings or mix-ins desired!

5 Day Meal Planning

5 Day Meal Planning 

I often get asked what my meal plan looks like. Am I starving myself to be fit and lean ? Am I constantly avoiding delicious foods? Is the food I eat bland and boring?.... The answer is HECK NO!! I love the way I eat and there is so much variety to eating clean. Spicing up your food and getting creative would be my number one tip!! So I figured What the heck! I'd share with you all a Day in the life of Christina :) 

Here is an Example of my 5 Day Meal Prep! 





Nutrition is such a vital part of our weight loss and weight maintenance journey, and having it broken down so easily is why I was SOOO intrigued a year ago and got started with the 21 Day Fix in the first place. I actually was tempted to try the FIX long before I was a coach too! Each container is a different size and is color-coded.  Each color corresponds with a certain food group.  You do a quick formula once to figure out the number of each container you need to eat every day, then you fill the containers with the food you love and go about your day.  It's so simple.  





Did I mention how much food you eat on this program??  I love it.  I love not feeling like I'm starving myself or cutting calories.  I've never been one to count calories or points, or to eliminate carbs or meats from my diet. Until my bikini Competition last year, I literally ate whatever I wanted whenever I wanted and just prayed it would not reflect me physically.   Instead, this program is about healthier eating in the right combination to fuel our bodies.  

I've said it before and I'll say it again...  

The healthier the food we put into our body is, the better results we will get out of the program . Also, as evident from this program, We are able to eat MORE food too.

It's true.  There have been people who have only followed the 21 Day Fix meal plan (without doing the workouts) and have lost weight.  Why? Because their bodies are getting what they need.  It's clean food so they burn it off easily and efficiently.  There aren't any preservatives, artificial sugars, or chemicals to weed through.  Your body gets TOP OF THE LINE nutrition from the second it hits your stomach.  And honestly, there's a lot to be said for cooking your own food at home and knowing exactly what you and your family are eating.

That being said... Adding in a 30 minute workout every day will only dramatically help your results and help you feeling slim for summer! Exercise revs up your metabolism, gets your blood pumping and tones up your body!

Sunday Meal Planning


Sundays. .. the day for relaxation, family time, coffee, pajama's and most importantly ORGANIZATION! I love taking my Sundays to plan my workouts, prep my meals and set up goals for the week ahead! Here is an example of my FAVOURITE meal plan! Check out some of the delicious recipes below!!






Egg Cups 
From the * 21 Day Fix * Program

Prep Eggs on Sunday afternoon Egg cups 1 carton of Egg whites 2 Full eggs Water 1 Bell Pepper Daiya Cheese (dairy and soy free) Instructions Add a bit of extra virgin olive oil onto a paper towel and “grease” a muffin tray. Pour the carton of egg whites into the tray to fill each compartment about 2/3 of the way. Mix the 2 full eggs in a bowl with a bit of water (approx. 3 tbsp) add chopped veggies and a bit of cheese. Add mixture to fill the rest of the tray.


 Bake at 350 for about 30mins or until the eggs rise in the tray and no liquid is left. Season with pepper. 2 of these cups are perfect for breakfast with some cut fruit ! or serve as a breakfast sandwich!




Quinoa black bean salad with grilled chicken
From the * 21 Day Fix * Program
Ingredients:
  • -  1 Cup Quinoa
  • -  1 Can Black beans, rinsed
  • -  1 Cup Corn
  • -  1/2 Cup Cilantro
  • -  1 1/2 Cup Tomatoes
  • -  1 Red Bell pepper, diced
  • -  1/2 Red Onion, diced
  • -  Avocado, for topping
    Dressing:
  • -  1/3 cup olive oil
  • -  1 tsp Cumin
  • -  1 Garlic clove, minced
  • -  Juice of 1 Lime
  • -  1/4 tsp of salt
    Directions:
  • -  Cook Quinoa as directed on package, let cool
  • -  Chop veggies
  • -  Mix together ingredients for the dressing
  • -  Add all veggies & dressing to Quinoa
  • -  Serve room temperature or refrigerate first 

Chocolate Chia Seed Pudding w. Berries
From the * 21 Day Fix * Program
  • -  2 1/2 cups unsweetened almond milk
  • -  1/2 cup chia seeds
  • -  6 Tbsp. organic unsweetened cocoa powder
  • -  2 Tbsp. pure maple syrup
  • -  2 tsp. pure vanilla extract
  • -  1/4 tsp. sea salt (or Himalayan salt)
  • -  3 cup chopped strawberries
    Instructions :
  • -  1. Combine almond milk, chia seeds, cocoa powder, maple syrup, extract, and salt in a
    large bowl; whisk vigorously for 2 minutes, or until cocoa powder is incorporated, and pudding is well blended.

  • -  2. Let stand at room temperature for 30 minutes, , stirring mix well. Refrigerate, covered, for 4 hours or overnight, stirring occasionally.
  • -  3. Divide evenly into six small serving bowls; top each serving with 1/2 cup of strawberries.
    Variation:
- This pudding could also be topped with chopped banana, fresh blueberries, fresh raspberries, chopped kiwi fruit, or chopped pear.
